Basic Taquitos by R.L. Keller

24 flour tortillas
Oil for deep frying
About a cup of favorite refried beans, blended until smooth
About 2 cups finely chopped beef, pork, or chicken, seasoned to taste
Favorite cheese, cut into thin slivers

Soften the tortillas 2 or 3 at a time by lightly frying them in oil until soft but not brown and crisp, or by wrapping in a tea towel and nuking for about a minute.  Spread the softened tortillas thinly with the refried beans, and cut into 1/4ths.  Place small amount of meat and cheese on triangle, roll up large side first, and secure with toothpick.  Continue until all tortillas are filled and rolled.  Heat about half an inch of oil to trying temperature and fry several of the taquitos at a time until crisp and nicely browned on all sides.  Place on paper towels to drain.  Serve with guacamole or salsa.
